Ilana Taub is CEO and Co-Founder of Bolder Foods, where she leads a team that firmly believes mycelium presents incredible untapped potential and are committed to action, rolling up their sleeves, and executing plans with determination. Before, Ilana Taub co-founded SNACT, a brand of food-waste fighting snacks that tackled tonnes of food from going to waste.

Bolder Foods develops ingredients to make the next wave of cheese alternatives using unique biomass fermentation of fungi and vegetable substrates. This innovative startup harnesses the power of submerged biomass fermentation to create non-novel, cost effective and scalable solutions for industry. Bolder Foods first B2B ingredient solution, MycoVeg™, is a natural bulk that provides taste and texture for alternative cheeses. It enables the creation of end products with a clean label, and removes the need for gelling agents and coconut oil which are traditionally used in most alternatives.
